Siempre estamos en busca de recetas fáciles de prepara (ya que sabemos que llevas una vida ajetreada) y sobretodo que sean lo mas saludable posible, por eso hoy te traemos la receta suuuper facil para Antipasti Penne para preparar, ya sea para almuerzo o cena en cualquier ocasión.
Los ingredientes
12 onzas de penne de grano entero
1 cucharada de aceite de oliva
Soppressata o salami de 3 onzas, cortado en trozos de 1/2 pulgada
Una lata de 14 onzas de corazones de alcachofa, colada y en cuartos
6 aceitunas rellenas de la reina española, a la mitad, más 2 cucharadas de salmuera
Una lata de 14 onzas de tomate sin sal agregada
4 a 5 hojas de albahaca fresca, y más para decorar
1/2 taza de mozzarella fresca en trozos de 1/2 pulgada
Direcciones
Ponga a hervir una olla mediana con agua, agregue la pasta y cocine de acuerdo con las instrucciones del paquete; Escurrir, reservando 1/2 taza de agua de la pasta. Regresa la pasta a la olla.
Mientras tanto, caliente el aceite de oliva en una sartén grande antiadherente a fuego medio-alto. Agregue el soppressata y cocine, revolviendo, hasta que se formen ampollas y el aceite se torne rojizo, aproximadamente 3 minutos. Agregue los corazones de alcachofas y las aceitunas y revuelva para cubrir. Agregue los tomates, el agua de la pasta reservada, las hojas de albahaca y 2 cucharadas de salmuera de oliva. Cocine a fuego lento y cocine hasta que la mayor parte del agua se evapore y la salsa se espese ligeramente, de 8 a 10 minutos.
Agregue la salsa y la mozzarella a la pasta en la olla y revuelva para combinar. Divide entre 4 cuencos y decora con más albahaca.
